Paris butter x 63 Clinton

For two nights only, Paris Butter becomes the stage for one of the most exciting collaborations of the year. We’re flying in New York’s Michelin-starred 63 Clinton, giving Auckland diners a once-in-a-lifetime chance to experience the magic of the Lower East Side right here at home.

At the centre of it all are Chef Sam Clonts and Raymond Trinh—the powerhouse duo redefining contemporary American dining. Sam, who became the youngest American chef ever to earn a Michelin star at just 26, is celebrated for his precise, imaginative cooking that fuses global influence with seasonal flair. Alongside him, Raymond curates 63 Clinton’s renowned beverage program and delivers the kind of warm, intuitive hospitality that has made their restaurant one of Manhattan’s most coveted reservations.

Together with Zennon Wijlens and the Paris Butter team, they’ll present an electrifying six-course tasting menu with snacks, marrying 63 Clinton’s modern Manhattan edge with Paris Butter’s creative New Zealand dining.

Seats are strictly limited. This is 63 Clinton’s debut and only appearance in New Zealand—a rare chance to be part of a dining experience that bridges New York and Auckland for two unforgettable nights.

Raising Awareness, One Minute at a Time

At Paris Butter, we believe the heart of any great business is its people.

This July, our Restaurant Manager and Beverage Director, Ben Carmine, is teaming up with his brother, Josh Carmine — an Aquatic Safety Researcher at Drowning Prevention Auckland — to take part in the Float first movement, raising awareness for drowning prevention in Aotearoa.

Drowning is one of the leading causes of accidental death in New Zealand. In the past year alone, 74 lives have been lost. On 25 July, Ben and Josh will float for 74 minutes — each minute honouring a life lost and helping to bring attention to this preventable tragedy.
